Stir-Fry Broccoli and Carrots

Broccoli and carrots are considered as super veggies because of their high vitamins and minerals content like vitamins C, K, and A; and minerals such as potassium, calcium and fiber. Looking for a quick but healthy meal for your family? We got you! Here’s a very healthy yet delicious meal out of these two super veggies. This recipe is also good if you're into a low carb diet.

Ingredients:

1 small onion, sliced and separated into rings

1 clove garlic, finely chopped

2 teaspoons ginger root, finely chopped

1 ½ cups small broccoli florets

2 medium carrots, thinly sliced

1 cup sliced mushrooms

¾ cup chicken broth

1 tablespoon cornstarch

1 tablespoon water

2 tablespoons oyster sauce


Preparation steps:
1. Stir-fry the ginger and garlic in a pan over medium heat until lightly browned. 2. Add the broccoli, carrots, and onion and stir-fry for 1 minute
3. Add the broth and season it with salt then cover and simmer until carrots are crisp tender. 4. In a separate container mix cornstarch and water; add and stir with the veggies. Cook until thickened.
5. Add the mushroom and the oyster sauce then stir until the mushroom is cooked.
