Mushrooms have been part of the healthy eaters' plate for decades. It's one of the most versatile healthy ingredients that you can add to your diet if you're looking to eat less meat.

To make this stir-fry, bring a cup of water to a boil in a wok or saute pan then add the green beans. Cover and let it steam until crisp-tender. Drain the beans, wipe the wok dry and return wok to the stove. On the same wok, heat a cooking oil over high heat and saute your onions and shiitake mushrooms for 3 mins. Turn the heat to medium and toss in your green beans, ginger and the garlic and quickly stir fry until fragrant. Add your oyster sauce and 2 tbsps of water, cook it for a minute then serve! 

Not your ordinary pulled  pork

To make this tasty vegan pulled pork, you just simply toss the shredded mushroom into a baking tray with spices (1 tsp smoked paprika, ¼ tsp salt, ¼ tsp cayenne pepper, 2 cloves minced garlic) with 1 tbsp olive oil and mix.  Bake it in a preheated oven at 400 degrees F, until all the edges are crispy. Baking the mushrooms gives it a firmer texture that closely resembles a pulled pork. Once cooked, set aside. In a large pan, saute the cooked mushrooms in 1 tbsp olive oil then add in the BBQ sauce. Cook for 3-5 mins until mixture thickens. It’s a perfect healthy palaman for your sandwiches, tacos, nachos, and more!
